Meatloaf!! ... I think.

So back home, my dad likes to buy minced pork. We'd buy just enough to fill a metal plate, and when we were cooking the rice, we'd put this plate in the ricepot as well, to cook alongside the rice. Sometimes we'd put in some salted fish for extra flavour. I can't remember if we did anything else.
Anyway, when I came here, I was disappointed to find no equivalent... except for meatloaf, and there's a ton of junk in meatloaf and it actually does look like a loaf so it's not quite the same...
Today, I decided to bring down the lean minced beef from my freezer and cook it. I also found some potatoes and decided to try making mashed potatoes too.
First things first, of course. I made the mashed potatoes. Here's the process:
- Boiled the potatoes in hot water (mixing in a bit of salt and beef stock powder) until I could stick a knife in without any resistance.
- While boiling, I took the meat and put it into a bowl and started stirring in soya sauce. I also mixed in two eggs, some sesame seed oil, just 'cos I could.
- I mashed up the potatoes mixing in butter, palm oil (healthier than most oils on the market).
- Then I mixed up both the mashed potatoes and the ground beef, adding in a couple more eggs (for easier mixing) and the remainder of my first jar of anchovies (replacing the salted fish).
- Into the oven the whole thing went after much mixing, and baked until it was done.
The result is enough meatloaf to last me a whole week or so ^^ At least I won't have to go out and buy luncheon meat for the next little while!! I'm not too fond of beef but I suppose it's a healthy alternative to pork. Plus, it's always good to expand one's diet.
I also made rice for the rest of the week. I personally enjoy fresh rice, and this jasmine rice from Compliments (cheapo brand) is actually pretty good stuff. I mixed in some chicken stock powder too. You can, you know, along with other stuff... that's how chicken rice stall owners get their rice flavoured the way it is. Mmhmm.
